Zest is the thin yellow outer layer of lemon peel that holds the fragrant oil glands. When a pyramid says “zest” specifically, the perfumer is highlighting the peel rather than the juicy flesh: this is the sound of a lemon just grated.
The zest note is fresher, drier and a little more bitter than “lemon in general”: less sweet juice, more bright essential sharpness and a light green bitterness. It adds cleanness and energy from the very first second.
