Black cherry means the dark, almost black varieties of sweet and sour cherry with dense, juicy flesh. In perfumery it sounds like a note of its own: deeper, sweeter and darker than ordinary red cherry.

How it smells: dense, sweet and slightly bitter: ripe dark berries, cherry liqueur, marzipan and almond stone, a light winey shade. Black cherry sounds sensual, luxurious and made for the evening.

Black cherry gets its depth from benzaldehyde — a molecule smelling of almond and cherry stone — combined with liqueur and vanilla notes. That is why it flows so easily into gourmand and amber compositions.

What it pairs with: with almond and tonka — “cherry liqueur”, with vanilla and chocolate — dark dessert fragrances, with rose and oud — luxurious evening compositions, with tobacco and leather — “cherry tobacco”, with patchouli — a deep fruity-woody base.

Good to know: Belgian kriek beer and Italian amarena are made from dark, tart cherries — and both smell noticeably of almond from the stones.
